Instructions
Heat olive oil in a pan over medium heat.
Spread pesto on one side of each bread slice.
Layer mozzarella cheese, sun-dried tomatoes, and spinach on one slice of bread, pesto side up.
Season with salt and pepper.
Top with the second slice of bread, pesto side down.
Grill the sandwich in the pan until golden brown, about 3-4 minutes on each side.
Remove from heat, slice in half, and serve warm.
