Sandwich Ingredients

  • 2 slices whole-grain bread
  • 2 slices mozzarella cheese
  • 2 tablespoons sun-dried tomatoes, chopped
  • 1/4 cup spinach leaves
  • 1 tablespoon pesto
  • 1 tablespoon olive oil
  • salt and pepper, to taste

Instructions
 

  • Heat olive oil in a pan over medium heat.
  • Spread pesto on one side of each bread slice.
  • Layer mozzarella cheese, sun-dried tomatoes, and spinach on one slice of bread, pesto side up.
  • Season with salt and pepper.
  • Top with the second slice of bread, pesto side down.
  • Grill the sandwich in the pan until golden brown, about 3-4 minutes on each side.
  • Remove from heat, slice in half, and serve warm.

Notes

Pair this sandwich with tomato soup, a simple green salad, or an olives and feta cheese platter for a complete meal.
