Ingredients
  

Chicken

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour

Cooking Ingredients

  • 4 tbsp olive oil
  • 4 tbsp unsalted butter

Sauce

  • 1/2 cup freshly squeezed lemon juice
  • 1 cup chicken broth
  • 1/4 cup capers rinsed
  • 1/4 cup fresh parsley chopped

Instructions
 

  • Season chicken breasts with salt and pepper.
  • Dredge each chicken breast in flour, shaking off the excess.
  • In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium-high heat.
  • Add chicken breasts to the skillet, cooking for 5-7 minutes on each side until golden brown and cooked through.
  • Remove chicken from the skillet and keep warm.
  • In the same skillet, add lemon juice, chicken broth, and capers. Bring to a simmer.
  • Whisk in remaining butter and cook for an additional 2 minutes.
  • Return chicken to the skillet, spoon sauce over, and heat through.
  • Garnish with fresh parsley before serving.

Notes

This dish pairs wonderfully with pasta, mashed potatoes, or a light salad. For extra richness, you can add a splash of white wine to the sauce.
